They're delicious! The major one around here is the Roxbury Russet, but I have had Golden Russets before and they are crisp and strong and supposedly cooking apples if you don't mind them falling completely apart in the process, although I've always just eaten them. They really are gold-colored under the russeting. Northern Spies are incredibly fragrant with a flavor to match and I have no idea where the name comes from. I don't remember what else
