We cast our nets to hold on fast
On the occasion of
spatch's birthday, we ordered a ton of sweet ribs and pulled pork and chicken and brisket and butter crack cake from the Smoke Shop and continued our unofficial tradition of cinematically visiting different eras of New York with James Goldman's They Might Be Giants (1971). I gave him an IOU for his on-the-way gift of Lola Montès (1955). My anniversary T-shirt had finally arrived from the UK, so I opened it ceremoniously for my unbirthday. We had to deal in the afternoon with something of a literal person from Porlock, but after dark we got out to view the progress of the GLX, which is beginning to look eerily real. Some year, perhaps again a Burns Supper.

It's been very strange to watch it come into being over the last decade, like the world's slowest developing photograph. I'm not sure how long it will take to feel real when it's finally open.

I only heard about the Burren's after they stopped doing it, alas. But maybe they'll resume.

I think the trickiest part is the organ meats, but if you have a good local butcher, I bet it can be done. I have never tried it myself, to be fair.

I know of a couple butcher shops around here if McKinnon's can't supply (but I'd bet on them). I've cooked kidneys, livers, and hearts, though all separately.

I got lost in the menu of the link to the restaurant. Historically, barbecue places have not been friendly to my weird dietary needs, but I could eat there.
