Braised rabbit risotto sounds unbelievable.

It was delicate and musky and very delicious. I love rabbit and it is not on a lot of menus, although I have this mixed feeling that it is becoming a trendy meat—sort of the way duck is suddenly everywhere in the last couple of years. But I am not going to refuse to eat a food I love just because popular dining has suddenly remembered it exists. Goat's milk and sheep's milk cheeses are suddenly everywhere, too, and that makes my life a whole lot easier.

(I suspect that was more of a manifesto than you were looking for.)
