A couple of years ago we had a regular rotisserie-chicken-into-two-meals+stock cycle going, with the carcasses sitting and seething in a crockpot while we were at work.
It was astonishing stuff, too; since I put the chicken skin in the pot the stock was so full of collagen it was almost chicken jelly.
