Yes in the sense that I have no allergies; no in the sense that coconut flakes are difficult for me to digest. I'd have to make some kind of coconut condensed milk glaze and drizzle it over the top if I wanted the flavor. If I wanted texture, I'm thinking crystallized ginger right now.
