Where did you get the pandan extract? I checked Penzeys, Kalustyans, and Fancy Flours, where I get my Seville orange extract and my bitteralmond, and they didn't have it and I want it.
One must make pandan frozen custard, although the dumplings did sound amazing. Boil in sugar is not an instruction it is often safe to follow in our household, though.
Ours just required a pot of water. Drop them into a rolling boil, give them a minute after they float to the surface; scoop out, shake off, drop into a bowl of shredded coconut and wait the minimal amount of cooling time necessary to avoid scalding one's tongue with melted palm sugar. I ate three for dessert and another for a snack this morning. Did I mention that palm sugar is nectar?
